Pasta with tuna and vegetables
Few people can resist the good taste of pasta and also experts advise that we eat it frequently but without abuse. So nothing is easier than preparing pasta with tuna and vegetables.
The pasta can be the one we like the most, depending on the type of pasta in question we can have it ready in about 10 minutes.
While the pasta is being made, we chop half an onion and a ripe tomato. We fry the onion and after a couple of minutes we add the chopped tomato. We leave it over medium heat for five minutes.
Cut half a pepper into squares and add it to the pan, then add a can of tuna that we have previously crumbled. Season to taste and add two tablespoons of crème fraiche. Add the pasta and leave it for another five minutes. Once the dish is finished we add a little grated cheese.
Cut one or two chicken breasts into small squares. In a frying pan we fry a chopped chive and then add a minced garlic clove, a pinch of ginger and a chilli. We add three tablespoons of crushed tomato. Stir and after a minute add a teaspoon of curry spice mix, half a teaspoon of ground turmeric, a quarter of a teaspoon of ground cumin and stir everything.
Season the chicken and add it to the pan, cook it over high heat until golden. We add 200 ml of coconut milk or cream to cook and let it reduce. After a few minutes it is ready to serve.
Hake With Tomato
A hake loin is cut into bite-sized pieces. Put a little olive oil in a large frying pan and mark the fish on both sides. The fish is removed and reserved.
In the oil that we have used for the fish, we fry a kilo of ripe tomatoes previously cut into large pieces (it is not necessary to peel them or remove the seeds). As it is done we add salt and sugar to find the point that we like the most in flavor.
We leave the tomato to cook for half an hour and then we pass it through the masher. We return the hake to the pan and add the tomato sauce, let it cook for a couple of minutes.
To make this dish even faster, we can make the sauce when we have more time and freeze it for future uses or we can buy a tomato sauce that is already manufactured but is of quality.
